TOMATO PRESERVES | |
5 lbs. firm red or yellow tomatoes 5 lbs. sugar 1 lemon, sliced thin Sm. piece of ginger root or 1 tsp. ginger ground Small piece stick cinnamon Skin and cut up tomatoes. Add remaining ingredients. Simmer slowly until thick, stirring frequently, about 45 minutes. (May take longer to boil down.) Remove ginger root and stick cinnamon. Pour into hot sterilized jars. Seal and process 10 minutes in boiling water bath. |
