DIET PINEAPPLE-CHEESE DESSERT 
4 oz. cottage cheese
1/2 c. crushed pineapple, drained
1/2 c. pineapple juice
1/4 c. water
2 oz. skim milk
1 pkg. unflavored gelatin
2 tsp. vanilla
1 tsp. lemon juice
3 pkg. sweetener

In saucepan, dissolve gelatin in 1/4 cup boiling water. Add pineapple juice, lemon juice, vanilla and sweetener. In a blender, combine cottage cheese, 2 oz. skim milk and pineapple mixture. Mix in the 1/2 cup of crushed pineapple. Chill until firm.
