SWEET AND SOUR BEEF ROAST 
3-4 lb. brisket (or boneless roast)
1 (12-16 oz.) duck sauce
1 env. onion soup mix
Salt, pepper & flour

Season brisket (or roast) with salt, pepper and flour; lightly brown on all sides in a frying pan. Place in roasting pan and sprinkle with onion soup mix and cover with duck sauce. Using heavy duty foil (or 2 layers of regular foil) cover the roasting pan tightly and let bake for 3 hours at 325 degrees. Let cool.

Slice (easier if you have had a chance to refrigerate) and return to sauce in roasting pan. Cook an additional hour before serving. (This is a good "cook ahead" recipe, freezes well. Just remember to cook that additional hour before serving.)

Serves 10-12.
