BRAN MUFFINS 
1 c. boiling water
1 c. raw bran
1/2 c. shortening
1 1/2 c. sugar or 3/4 c. honey
2 eggs
2 c. yogurt or buttermilk
2 1/2 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 c. bran cereal
1/2 c. raisins, apples, or blueberries

Combine boiling water and bran. Let set for 5 minutes. Cream together shortening and sugar and add to above. Beat in eggs and yogurt. Sift together flour, soda and salt and add to above. Add the remaining bran cereal and raisins, blueberries or apples, etc. (bananas, chips). Fill muffin cups 2/3 full. Bake at 400 degrees for 18 to 20 minutes.
