ITALIAN SAUSAGES ON SHREDDED
ZUCCHINI
 
1 lb. Italian sausages, preferably in lg. casings
2 lbs. unpeeled zucchini, coarsely shredded (6 c.)
1/2 c. butter
1 1/2 tsp. minced garlic
Salt & pepper to taste

Bake sausages in greased shallow baking pan in 350 degree oven, turning occasionally, 30 minutes or until browned and juices run clear when sausages are pierced with fork. Meanwhile wrap zucchini in several thicknesses of paper towels; squeeze out moisture. Just before serving, heat butter until bubbly, add garlic, zucchini, salt and pepper. Stir about 3 minutes or just until zucchini is heated through and barely crisp-tender.

Slice sausages diagonally. For each serving arrange zucchini on a warm plate; top with sausage. Serve with cheese and orange slices and Italian bread.
