ZUCCHINI AND ITALIAN SAUSAGE
QUICHE
 
1 prebaked deep dish pie crust
2 c. shredded zucchini
1/2 lb. sweet Italian sausage meat
1 c. shredded Swiss cheese
4 eggs, lightly beaten
1 1/2 c. half & half
1/4 c. grated Romano or Parmesan cheese
1/4 tsp. white pepper

In quiche pan or deep dish pie pan, prebake pie crust at 450 degrees for 8 minutes. Meanwhile, cook sausage meat in fry pan until no pink remains. Drain on paper towels. In sausage drippings, saute zucchini until tender. Spread zucchini in bottom of bake pie shell; top with crumbled sausage and then Swiss cheese. Add remaining ingredients to eggs; blend well and pour into filled pie shell.

Bake at 450 degrees for 15 minutes. Reduce temperature to 350 degrees and bake 15 minutes. Let stand 15 minutes before serving.
