ITALIAN SAUSAGE - ZUCCHINI
CASSEROLE
 
8 oz. fettucini or med. noodles
1 lb. Italian sausage
2 c. chopped zucchini
1 (4 oz.) can button mushrooms, drain, but reserve liquid
1/4 c. chopped onion
1/4 c. sliced pimento-stuffed green olives
2 (8 oz.) cans pizza sauce
2 c. (8 oz.) shredded cheddar cheese
1/3 c. grated Parmesan cheese
3 slices zucchini

Cook noodles in boiling, salted water until not quite tender. Drain. Toss together sausage, chopped zucchini, mushrooms, onion, olives, 1 can pizza sauce and 1 1/2 cups chopped cheddar cheese. Pour into 2 quart casserole.

In small bowl combine mushroom liquid and pizza sauce; pour over casserole. Sprinkle with remaining cheese. Garnish in center with 3 zucchini slices. Bake in preheated 375 degree oven for 20 to 25 minutes or until heated thoroughly.
