BANANA NUT BREAD 
3 1/2 c. sifted flour
3 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 c. mashed, ripe bananas
2 tbsp. lemon juice
3/4 c. shortening
1 1/2 c. sugar
3 eggs
3/4 c. milk
1/2 c. chopped pecans

Sift together flour, baking powder, salt and baking soda. Combine bananas and lemon juice; mix well. Cream together shortening and sugar in bowl with electric mixer at medium speed until fluffy. Add eggs and beat thoroughly until very light and fluffy. Add dry ingredients alternately with milk, fold in bananas and nuts. Beat after each addition. Pour into 2 greased 8 1/2" x 4 1/2" x 2 1/2" loaf pan. Bake in 350 degree oven 1 hour or until cake tester comes out clean. Makes 2 loaves.
