TEN MINUTE CHICKEN POLYNESIAN | |
1 1/2 lbs. chicken cutlets, boneless breasts 1 tbsp. soy sauce 1 tbsp. salad oil 1/2 chopped onion 1 green pepper, seeded & sliced 1 c. juice packed crushed pineapple 16 oz. can plain tomato sauce Cut chicken into 2" chunks. Put chicken, soy sauce and oil in non-stick skillet over high heat. Cook and stir until chicken chunks are lightly browned. Stir in all remaining ingredients, cover and cook 5 minutes over low heat. Uncover and continue to cook and stir until the liquid evaporates into a thick sauce. Serves 6. |
