SWEET POTATO PUDDING 
2 c. mashed sweet potato
2 eggs
1 c. milk
6 tbsp. sugar
1 tsp. salt
2 tbsp. butter
8 marshmallows or 1/2 c. marshmallow whip

Cook sweet potatoes with skins on until soft peel and mash. Add sugar, salt, melted butter and rich milk. Beat eggs well and add to mixture. Pour in a buttered baking dish and top with marshmallows.

Bake at 350°F for 45 minutes.

Serves 6.
