SWEET POTATO PUDDING | |
4 c. grated, raw, peeled sweet potatoes 1 stick butter, melted 1/2 tsp. ground cloves 1/2 tsp. ginger 1/2 tsp. allspice 3 eggs, beaten 1 c. brown sugar, packed 1 c. dark Karo syrup 1 1/4 c. milk 1/2 c. pecan pieces, raisins or coconut or any of the three in combination (optional) Preheat oven to 350°F. Combine the sweet potatoes, butter, spices, eggs, brown sugar, Karo syrup and milk. Stir to mix well. Add the nuts, raisins or coconut, if you like. Pour into a greased 1-quart baking dish and bake for 50 to 60 minutes or until well set. Serves 8 to 10. |
