GRATED RAW SWEET POTATO PUDDING 
4 c. grated raw sweet potatoes
1 c. sugar
1 1/2 c. milk
1/3 c. butter
3 eggs
1 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. salt

Beat eggs without separating and add to the milk. To the grated sweet potatoes add the melted butter, sugar, spices, salt, milk and eggs. Pour mixture into a buttered pudding pan and bake in a moderate oven. When crusted around the edge and top, stir and let crust again. Do this several times and then allow a final browning of top and sides before removing from oven. If desired 1/2 cup coconut and 1/2 cup raisins may be added.

I have made this recipe for years and it is always hit, especially even with those who don't like sweet potatoes. It is great with Turkey or Ham.

I use a 350°F oven. I do like coconut and raisins, but my recipe calls for an 8 oz. can of crushed pineapple (you can use more).
