GERMAN POTATO SALAD 
8 potatoes
2 stalks celery
2 hard cooked eggs, sliced
2 onions
1 tbsp. minced parsley
2 eggs, well beaten
1 c. sugar
1/2 c. vinegar
1/2 c. water
1/2 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. pepper
1 lb. bacon

Boil potatoes in jackets until soft, peel and dice. Add celery, hard cook eggs, onion and parsley. Fry bacon until crisp and lightly browned, crumble. Combine beaten eggs, sugar, mustard, salt, pepper, vinegar and water. Mix well. Pour egg mixture into hot bacon and fat. Stir about 10 minutes or until mixture thickens and becomes white in color. Pour mixture over potatoes and mix lightly. Good hot or cold.
