SURPRISE ZUCCHINI BREAD 
3 lg. eggs, well beaten
1 c. oil
2 c. sugar
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
3 c. zucchini squash
1 c. nuts, chopped
1 c. coconut

Add oil, sugar and vanilla to well beaten eggs; mix well. Sift dry ingredients together and then add to the egg mixture alternately, with 3 cups peeled and grated zucchini. Stir in nuts and coconut. Pour into greased loaf pans and bake at 325 degrees for 1 hour and 15 minutes. Makes 1 large loaf or 3 small ones.
