ZUCCHINI BREAD - YUM 
3 eggs
1 c. oil
2 c. sugar
1 tsp. vanilla
2 1/2 c. shredded zucchini
8 oz. can crushed pineapple, drained
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. cinnamon
3/4 tsp. nutmeg
Walnuts
Raisins, optional
Coconut, optional

Mix all ingredients in a large bowl until well blended. Turn batter into greased 9 x 5 inch pans. Bake at 350 degrees for 60-70 minutes or until a toothpick inserted into the center comes out clean. Remove from pan and cool on rack. Makes 2 loaves.
