ZUCCHINI SQUASH BREAD 
2 1/2 to 3 c. grated squash
1 c. oil
1 c. brown sugar
1 c. white sugar
3 eggs
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 tsp. cinnamon
2 tsp. vanilla
1/2 c. nuts
1 c. raisins
1 c. coconut
2 1/2 c. flour

Mix sugar, oil and eggs, beat together. Add squash, beat together. Add dry ingredients; nuts, raisins, coconut and vanilla. Mix well.

Bake at 350 degrees for 40 to 60 minutes. Makes 2 loaves or 1 (9 x 13 inch) pan.
