ZUCCHINI SQUASH BREAD | |
3 eggs 2 c. grated zucchini, peeled or unpeeled 1 c. oil 2 c. sugar 2 tsp. vanilla 3 c. flour 3 or 4 tsp. cinnamon 1/2 c. nuts Plain or self-rising. If plain is used, add 1 teaspoon baking soda, 1/4 teaspoon baking powder and 1 teaspoon salt. Beat eggs until foamy, add oil and sugar; beat well. Add zucchini, vanilla, cinnamon, flour and nuts. Cook in flat about 10x13 inch pan at 350 degrees until done. (I never peel my zucchini and use peeling and all. Have always used plain flour but guess self-rising would be just as good!) |
