PUMPKIN NUT BREAD 
2 c. sifted flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. Libby's solid pack pumpkin
1 c. sugar
1/2 c. milk
2 eggs
1/4 c. soft butter
1 c. chopped walnuts

Sift together flour, baking powder, baking soda, salt and spices. Combine pumpkin, sugar, milk and eggs in mixing bowl. Add dry ingredients and soft butter; mix until well blended. Stir in nuts. Spread in well-greased loaf pan (9 x 5 x 3 inches). Bake at 350 degrees for 45 to 55 minutes or until toothpick inserted in center comes out clean. Makes 1 loaf (can be frozen).

NOTE: Since 1 can of Libby's pumpkin contains so much, you may want to double this recipe to make 2 loaves of bread or 1 loaf and 12 muffins.
