PUMPKIN - RAISIN NUT BREAD 
1 c. vegetable oil
4 eggs, beaten
2/3 c. water
2 c. pumpkin
3 1/3 c. flour
3 c. sugar
1 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
2 tsp. baking soda
1/2 c. raisins
1/2 c. chopped pecans or walnuts

Combine oil, eggs, water and pumpkin (canned and mashed). Sift together into mixing bowl flour, salt, nutmeg, baking soda, cinnamon and sugar. Make a well in center, add pumpkin mixture and blend until dry ingredients are moistened. Stir in raisins and nuts. Turn into prepared pans and bake in preheated oven about 1 hour at 350 degrees.

Makes three 8 1/2 x 4 1/2 loaves.
