ZUCCHINI BREAD 
3 eggs, beaten
2 c. sugar
1 c. salad oil
3 tsp. vanilla
2 c. peeled grated zucchini
3 c. flour
3 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder

Sift ingredients together. Mix with the wet ingredients. Add 1/2 cup nuts.

Bake at 325°F for 1 hour or until done.

Makes 2 large loaves.
