APRICOT BARS 
1 1/2 c. sifted flour
1 tsp. baking powder
1/4 tsp. salt
1 1/2 c. Quaker oats
1 c. brown sugar
3/4 c. shortening, butter
3/4 c. apricot preserves or other fruit jam

Sift together flour, baking powder, and salt. Stir in oats and sugar. Cut in shortening until crumbly. Put 2/3 of crumb mixture into an 11 x 7 x 1 1/2 inch pan. Spread with jam. Cover with remaining crumb mixture. Bake in moderate 375 degree oven about 35 minutes or until browned. Cool. Cut in bars or squares.
