DATE AND NUT BREAD SUGAR AND
DAIRY FREE
 
4 c. chopped dates
2 c. coarse chopped walnuts
2 c. boiling water
2 3/4 c. flour
1 1/2 tsp. baking soda
1 tsp. salt
1/2 c. butter, softened
Sweetener equal to 1 1/4 c. brown sugar
2 eggs
1 tsp. vanilla

Preheat oven to 350 degrees. Grease 2 (9 x 5) loaf pans. Combine dates, nuts and boiling water. Allow to cool to room temperature, about 45 minutes. Sift flour with baking soda and salt. On high speed of mixer, beat butter with sugar substitute, eggs and vanilla until smooth. Add date mixture, mix well. Add flour mixture, beat with wooden spoon until well combined. Place in prepared pans. Bake 70 minutes or until tester comes out clean. Cool 10 minutes in pans. Turn out on rack and cool to room temperature.
