HAM QUICHE 
9 inch unbaked pastry shell
1 c. shredded Swiss cheese
1 tbsp. flour
1/3 c. water
1 1/2 c. finely diced cooked ham
2 tbsp. thinly sliced green onion
1 tall can evaporated milk
2 tbsp. chopped parsley
3 eggs
1/4 tsp. salt
1/4 tsp. nutmeg
1/8 tsp. pepper

Prepare pastry and line pie plate, being certain not to stretch pastry. Sprinkle flour over cheese and mix lightly. Spoon half of this into pastry shell and top with diced ham. Beat eggs in medium size bowl. Stir in milk, water, onion, parsley, nutmeg, salt, and pepper. Pour over ham and cheese. Sprinkle remaining cheese on top and bake in a 375 degree oven for 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes before cutting.
