GARLIC AND MINT BAKED POTATOES 
1 dozen red potatoes (small size is best)

MIX THE FOLLOWING:

1/2 cup olive oil
1/4 cup crushed dried mint
6 cloves garlic
1 tbsp. coarse salt

Pierce potatoes well and bake for 2 hours at 350°F.

Remove from oven and break open. Place on a cookie sheet.

Spoon mixture over opened potatoes and put back in the oven for another hour. The potatoes will be dried out and soak in the mix. Mmmmm good!
