STUFFED PORK CHOPS 
6 loin pork chops, cut 1" thick (cut sm. pocket in each)
1 c. soft bread crumbs
1/2 c. celery, chopped
2 1/2 tbsp. butter, melted
2 tbsp. fat, melted (optional)
2 tbsp. onion, grated or finely chopped
1/2 tsp. sage
1/4 tsp. salt
1/8 tsp. pepper

Combine crumbs, celery, onion, butter, sage, salt and pepper. Toss lightly until well blended. Stuff each pork chop with bread crumb mixture. Brown chops on both sides. Add enough water to cover bottom of pan. Cover and bake at 350 degrees for 1 hour.
