3 lbs. sm. chicken wings (about 15) 1/2 c. sugar 3 tbsp. cornstarch 1 tsp. salt 1/2 tsp. ground ginger 1/4 tsp. pepper 3/4 c. water 1/3 c. lemon juice 1/4 c. soy sauce Singe wings; cut off tips and discard. Separate in two at joint. Line pan with foil. Place wings in a single layer on rack of broiler pan. Bake at 400 degrees for 30 minutes, turning once. Meanwhile, mix other ingredients in small saucepan; cook, stirring constantly, until mixture thickens and boils. Brush mixture over chicken and continue baking, turning and brushing several times, for 40 minutes. Serve hot, framed with a ring of lemon slices. Other chicken parts may be used, such as breasts and thighs if bones are removed. |
