APPLES AND CARROTS 
3 tbsp. butter
3/4 c. soft bread crumbs
2 c. chopped onion
6 c. sliced, pared, cored tart apples
2 c. cooked, sliced, pared carrots
2/3 c. shredded sharp Cheddar cheese
1 tbsp. sugar
1 tbsp. flour
1/4 tsp. salt

In skillet, over medium-high heat, melt butter. Remove 1 tablespoon and toss with bread crumbs; set aside. Add onions to butter remaining in skillet; sauté until tender. In large bowl, toss onions with apples and next 5 ingredients until mixed. Pour into shallow baking dish; cover with foil.

Bake in 350°F oven 55 minutes. Remove foil; sprinkle with crumb mixture.

Bake 15 minutes more or until apples are tender.

Makes 8 servings.
