2 c. fresh chopped spinach, divided
1 c. shredded carrot
2 stalks green onion, thinly sliced diagonally
2 hard cooked eggs, sliced
2 apples, chopped
Apple Salad Dressing

Layer ingredients except Apple Salad Dressing in a glass bowl. Pour Apple Salad Dressing over the layers and toss to coat all ingredients.

APPLE SALAD DRESSING: Combine 1/4 cup each cider vinegar, olive oil and packed brown sugar and 1 small clove minced garlic; mix well.
