SPINACH, BACON AND APPLE SALAD 
5 slices bacon, cooked
1/4 c. sliced almonds
8 c. spinach (10 oz. pkg. fresh) rinsed, stemmed & torn
3 green onions, sliced
1 Red Delicious apple, unpeeled, cored, chopped (at last minutes)

In skillet, cook bacon until crisp and drain on paper towels. Crumble. In 1 tablespoon bacon grease in same skillet, cook almonds, shaking over high heat until almonds are browned.

In large salad bowl, combine spinach, bacon, almonds and onions. Just before serving, prepare apples; add apple and dressing to salad and toss. Serves 6-8.

DRESSING:

1/2 c. vegetable oil
6 tbsp. red wine vinegar
2 tsp. sugar
1 tsp. prepared mustard
Salt
Freshly ground pepper

In lidded jar, combine all dressing ingredients. Shake well, refrigerate.
