2 c. fresh, chopped spinach, divided
1 c. shredded carrot
2 stalks green onion, thinly sliced diagonally
2 hard-cooked eggs, sliced
2 Golden Delicious apples, chopped
Apple Salad Dressing

Layer ingredients except apple salad dressing in glass bowl. Pour apple salad dressing over layer. Toss to coat. Makes 4 servings.

APPLE SALAD DRESSING:

Combine 2 tablespoons lemon juice, 1/4 cup cider vinegar, a small clove minced garlic, 1/4 cup packed brown sugar and 1/2 cup oil. Mix well. Makes about 1 cup.
