APPLE-CARROT CAKE | |
1/4 c. butter, softened 1 c. sugar 1 tsp. cinnamon 1/4 tsp. nutmeg 1 tsp. vanilla 1 c. flour 1 tsp. baking soda 1 medium cooking apple, grated 2 medium carrots, grated 1 c. raisins 1 c. walnuts Glaze: 1/2 c. powdered sugar 2 tbsp. fresh lemon juice Mix all ingredients thoroughly. Spoon into greased 8 x 8-inch baking pan. Bake in preheated 350°F oven for 45 to 50 minutes. While cake is warm, drizzle mixed glaze over top. Cool cake before cutting. No eggs in this cake. |
