APPLE CARROT MUFFINS | |
In large bowl add and combine well: 3 eggs 2/3 c. sugar 1/2 c. oil 1 c. shredded apple 1 c. shredded carrots 1 tsp. vanilla In smaller bowl combine well: 1 c. graham flour 1 c. cake flour 1 tbsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 c. chopped walnuts or pecans Combine wet and dry ingredients and fold together gently. Spoon into muffin pans and top each with a nut half. Bake 375, 25-30 minutes. Makes 12. |
