APPLESAUCE-CARROT MUFFINS | |
3/4 lb. carrots, grated 1 lb. applesauce 8 eggs 1 tbsp. vanilla 2 c. vegetable oil 3 1/2 c. white flour 3 1/2 c. whole wheat pastry flour 1 1/2 c. white sugar 1 1/2 c. brown sugar 2 tbsp. cinnamon 1 1/2 tsp. nutmeg 1 1/2 tsp. baking soda 1 1/2 tsp. baking powder 1 1/2 tsp. salt Chopped nuts Cinnamon & sugar, mixed Mix wet and dry ingredients in separate bowls. Add nuts to dry ingredients. Add wet ingredients to dry and stir just enough to moisten thoroughly. Spoon into paper-lined muffin cups, sprinkle with cinnamon-sugar mixture. Bake at 400 degrees for 20 minutes. Makes 4 dozen. |
