BRAN-CARROT MUFFINS | |
3/4 c. boiling water 1/4 c. molasses 1 c. 100% Bran cereal 1/2 c. cooking oil 1 c. white sugar 1/2 c. brown sugar 2 c. all bran cereal 2 eggs 1 pt. buttermilk 2 1/2 c. flour 2 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1 c. grated carrots, raisins, dates or nuts (opt.) Combine boiling water with molasses and pour over 100% Bran cereal. Let stand to cool. Cream oil and sugars, add eggs. Mix soda and salt with All Bran cereal. Set aside. Add flour and all the rest of the ingredients (except optionals) alternately with buttermilk. Mix thoroughly. Add any optionals. Bake in muffin tin (which has been oiled) for about 15 minutes (until tests for doneness with clean toothpick) at 350 degrees. Yield: about 30 muffins. They freeze well. |
