ZESTY LIME CORNISH HENS 
6 Cornish game hens, about 1 lb. each
2/3 c. imported Italian olive oil
1/2 c. fresh lime juice
1/4 c. chopped green onion
2 tbsp. chopped parsley
1 tbsp. grated lime rind
1 tsp. salt, optional
1/4 tsp. paprika
1/8 tsp. pepper

Wash hens; pat dry. Combine remaining ingredients in shallow baking dish. Add hens; cut to coat with marinade. Cover and refrigerate overnight. Turn several times. Remove hens from marinade. Grill over hot coals, 4 inches from heat, about 1 hour or until done, or bake in 350 degree oven for 1 hour. Turn and baste often with remaining marinade. Yield: 6 servings.
