ROASTED CORNISH HENS 
Rock Cornish hens
lemon juice
Salt & pepper
Parsley
Rosemary
Butter

Wash and pat dry hens. Sprinkle cavity with lemon juice, salt & pepper. Place a few sprigs of parsley, pinch of rosemary and 1 tablespoon butter in each bird. Roast in 425 degree oven for 45 to 50 minutes. Better if placed on rack in pan
