CHICKEN WITH ROASTED PEPPERS 
1 tbsp. olive or vegetable oil
1 chicken, cut in sm. pieces, or 4 chicken breasts, with skins, quartered
1 (7 1/2 oz.) jar roasted red peppers

Preheat oven to 375 degrees. Heat a large oven-proof frying pan over medium-high heat, then add a tablespoon of oil. Lightly brown chicken pieces. Pour the peppers with the juices over the chicken. Cover pan with lid, transfer to oven and bake 45 minutes.

Serves 4.
