HIGH - FIBER BANANA BREAD | |
1/2 c. butter 1/3 c. honey 2 eggs 1 1/2 c. mashed bananas 1 3/4 c. whole wheat flour 1/2 c. unprocessed miller's bran 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 3/4 c. chopped walnuts Cream butter until fluffy. Continue creaming while adding honey in a fine stream. Add eggs and bananas; mix well. Combine flour, bran, soda, baking powder and salt. Add flour mixture to banana mixture in 2 or 3 parts, beating well after each addition until smooth. Fold in walnuts. Pour batter into oiled 9 x 5 x 3 inch loaf pan or 2 smaller pans. Bake in preheated 350 degree oven for 45 minutes to 1 hour. Cool. |
