BEEF JERKY 
3 lbs. lean round beef

MARINATE:1/2 c. water
1 1/2 tsp. garlic
1/3 c. soy sauce
2 tsp. liquid smoke
2 tsp. coarse ground pepper

Remove all fat. Slice into 1/4 inch thickness. Cut slices into 1x4 inches trips. Mix marinate and let set 1/2 hour, stir twice. Lay beef strips in marinate pan. Place marinate between layers. Press down, cover meat with marinate, let sit overnight in refrigerator. Pat off excess marinate on paper towels. Place on screen in oven or dehydrator at 150 degrees. Sprinkle with coarse ground pepper.

If you use oven, leave door slightly open for two 24 hour periods or until no moisture can be observed. Let cool completely and store in airtight container. Makes about 1 pound dried jerky.
