GREEN BEAN AND POTATO CASSEROLE | |
1 1/2 c. green beans, cooked 1 c. potatoes, cooked & diced 4 slices bacon 1 sm. onion, chopped 1 1/2 tbsp. flour 1 c. evaporated milk (undiluted) 1 c. cheese, shredded 1/3 c. cracker crumbs Combine beans and potatoes, and place in greased 1-quart casserole. Fry bacon until crisp. Drain, saving 1 tablespoon drippings. Crumble bacon and set aside. Saute onion in drippings. Add flour and stir to a smooth paste. Slowly add milk. Cook, stirring constantly, until thickened. Add cheese. Stir until melted. Pour over vegetables in casserole and stir well. Sprinkle with cracker crumbs. Add crumbled bacon on top. Bake at 350 degrees for 30 minutes. Makes 6 servings. |
