GREEN BEAN AND POTATO CASSEROLE 
1 1/2 lbs. green beans
1 med. diced onion
3 tbsp. bacon drippings
Salt and pepper to taste
2 lg. potatoes, quartered lengthwise
2 strips bacon, diced
1/2 stick butter

Parboil green beans for 3 minutes. Place bacon, grease and onions in skillet. Fry until onions are slightly browned. Put in with beans. Add butter and cook 1/2 hour longer. Add potatoes. Cook 1/2 hour longer. Place in baking dish, salt and pepper. Bake 15 minutes. Top with strips of crisp bacon.
