MOM'S LEMON ICEBOX PIE 
Crust:

1 box vanilla wafers
2 to 3 tbsp. melted butter

Crush about half the vanilla wafers. Set aside the remaining whole wafers. Combine crushed wafers and butter. Add more wafers or butter to achieve desired consistency. Press mixture into bottom of pie pan. Line sides of pie pan with whole vanilla wafers.

Filling:

1 can condensed milk
3 egg yolks, beaten
2 lemons, juiced

Combine egg yolks and condensed milk. Add lemon juice and mix well by hand. Pour mixture over crust.

Meringue:

3 egg whites
2 to 3 tbsp. sugar per egg
1 tsp. vanilla

Beat egg whites until you can form peaks. Add sugar a tablespoon at a time. Beat until you cannot feel grains between your fingers. Add vanilla. Put meringue on top of pie and put in oven until meringue turns light brown, about 15 minutes at 350°F.
