MOM'S PRIZE LEMON MERINGUE PIE 
1 1/2 c. sugar
1/4 c. plus 2 tbsp. cornstarch
1 tbsp. flour
1/8 tsp. salt
1/2 c. lemon juice
3 egg yolks, well beaten
1 1/2 c. boiling water
1 tbsp. grated lemon rind
1 c. cold water
1 baked 9 inch pie shell

MERINGUE:

3 egg whites
2/3 c. sugar
1/2 tsp. cream of tartar

Blend sugar, cornstarch, flour and salt in medium saucepan. Add lemon juice, rind, cold water, beaten egg yolks, blending until very smooth. Add boiling water.

Bring to a boil over medium heat, stirring constantly, then boil 2-3 minutes. Remove from heat. Stir filling occasionally until warm. When cool, add to pie shell.

MERINGUE: Beat 3 egg whites, cream of tartar. Add sugar gradually. Apply to top pie filling. Bake at 350 degrees for 10-13 minutes.
