LEMON MERINGUE PIE 
1 c. sugar
4 tbsp. cornstarch or flour
1/4 tsp. salt
2 tbsp. sifted flour
2/3 c. cold water
2/3 c. hot water
2 egg yolks
1 tbsp. butter
1/2 c. lemon juice
1 tsp. grated lemon rind
1 baked pie shell

Meringue:

2 egg whites
4 tbsp. sugar
1/4 tsp. salt

Combine sugar, cornstarch, salt and flour in a saucepan. Add cold water and stir until smooth. Add boiling water and cook slowly, stirring constantly, until mixture is thick. Continue cooking for 3 minutes. Beat egg yolk, then add small amount of hot mixture. Blend well, then add to all remaining hot mixture. Next, add butter, lemon juice and grated lemon rind and cook for 1 minute. Cool and pour into baked pie crust.

Beat meringue until stiff. Put on pie and bake in 300°F oven for 18 minutes or until brown.
