MARINATED MUSHROOMS | |
1 lb. fresh mushrooms 4 tbsp. wine vinegar 3 tbsp. olive oil (I use 4) 1/2 tsp. salt 1/2 tsp. oregano Dash of black pepper (I use coarse ground) 1 tbsp. chopped parsley 1 clove garlic, crushed (I use 2) Wash and boil mushrooms in salted water 5-10 minutes. (I boil them only 5 to insure that they retain texture.) Drain. Blend remaining ingredients and pour over mushrooms. Marinate in refrigerator several hours. Serves 6. |
