MARINATED MUSHROOM SAUCE 
8 oz. sm. white mushrooms, wiped & coarsely chopped
1/4 c. finely chopped red onion
1/4 c. finely chopped red bell pepper
1/4 c. chopped Italian flat leaf parsley
1 tbsp. fresh oregano leaves or 1/2 tsp. dried
1 tsp. fresh thyme leaves or 1/4 tsp. dried
1/3 c. olive oil
2 tbsp. fresh lemon juice
1/2 tsp. salt
1/8 tsp. freshly ground black pepper

Combine the mushrooms, onion, red pepper, parsley, oregano and thyme in a small bowl. Whisk the oil, lemon juice, salt and pepper in a separate bowl, fold together. Cover and marinate, refrigerated, 1-2 hours. Toss sauce with hot pasta and serve at once.
