MARINATED GREEN BEANS WITH SOUR
CREAM SAUCE
 
2 (#2) cans green beans
1 thinly sliced onion
1 tbsp. salad oil
1 tbsp. vinegar
Salt and pepper to taste

Mix, marinate in refrigerator over night or at least several hours. Stir 2 or 3 times. Drain and add sauce just before serving.

SOUR CREAM SAUCE:

1/2 c. sour cream
1/2 tsp. lemon juice
1/4 tbsp. horseradish
1/4 c. mayonnaise
1/8 tsp. dry mustard
1 tsp. chopped chives
Grated onion, to taste

Combine all ingredients and mix well. Let stand over night in refrigerator. Mix well and pour over salad just before serving.

Serves 6 to 8.

To serve 50 people use 10 cans of green beans and increase other ingredients accordingly.

May be served as a salad or as a cold vegetables.
