BROCCOLI AND RICE CASSEROLE 
1 c. cooked rice - not minute rice
1 lg. pkg. broccoli, thawed
1 lg. onion, diced sm.
3 tbsp. butter
3/4 c. milk
1 can cream of chicken soup
1/2 lb. Velveeta cheese

Saute onion in butter until soft. With whisk, stir in milk and soup. Cook over medium heat until hot. Stir in cheese and stir until cheese is melted. Stir in broccoli and rice. Pour into a casserole dish. Bake at 375 degrees for 30-45 minutes.
