MEXICAN SALAD 
1 lg. head lettuce
2 tomatoes, diced
8 oz. rat cheese, grated
3/4 sm. bottle Catalina dressing, chilled
1 can ranch style beans
1/2 sm. onion, chopped fine
1 lg. pkg. Fritos, crumbled

Prepare lettuce as for any salad; drain and wash chilled beans and add these. Add the diced tomatoes, onions, and cheese. Chill 30 minutes to an hour before serving. Add Fritos and dressing just before serving. Makes a large serving and will not keep crisp until next meal. Unless serving a large crowd, half the recipe.
