PIGS IN A BLANKET | |
1 large round steak Salt, black pepper, red pepper 2 tbsp. shortening 2 strips lean bacon (cut in three pieces) 1 med. onion, sliced 1/2 c. flour 1 c. water Cut round steak in about six squares. Season well with salt, black and red pepper. Place one slice bacon and one slice onion on a square, then fold it over and hold it together with two toothpicks. Roll in flour. Repeat the process until all six pigs are ready. Heat shortening in iron pot and brown one "pig in a blanket" at a time, removing each browned one and replacing with another until all have been well browned. Return pigs to pot and add water. Cover and cook on low fire for 45 minutes. Do not stir. If gravy reduces too much, add more water. Serve over rice. |
